Healthy Lamb Roast


  • 1 whole leg of lamb, approximately 4-5 pounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup red wine
  • 2 cups chicken or beef broth


Preheat the oven to 375°F.

In a small bowl, mix together the minced garlic, dried rosemary, dried thyme, dried basil, salt, and pepper.

Rub the lamb with the olive oil and then sprinkle the herb mixture over the entire roast, massaging it in so it adheres to the meat.

Place the lamb in a roasting pan and add the red wine and broth to the bottom of the pan.

Cover the pan with aluminum foil and place it in the oven to cook for approximately 2 hours.


After 2 hours, remove the aluminum foil and baste the lamb with the pan juices.

Raise the oven temperature to 425°F and continue to cook the lamb, basting every 15 minutes, for an additional 30 minutes or until the internal temperature reaches 145°F.

Remove the lamb from the oven and let it rest for 10-15 minutes before slicing.


Slice the lamb and serve it with a side of roasted vegetables and a simple salad.

You can also make a gravy with the pan juices by adding a slurry of cornstarch and water and cooking it on the stove until thickened.
